Cape Verde Recipe for Lamb with Sweet Potatoes
We prepare ingredients:

  • 500 g of Jamy sweet potatoes
  • 2 medium sized tomatoes
  • 600 g of lamb
  • 1 big onion
  • 2 cloves of garlic
  • 2 dc white wine
  • 1 bay leaf
  • Chili to taste
  • Salt to taste
  • 1 dl of olive oil

Peel jam potatoes and cut into quarters. Cut the lamb meat into pieces.
Fry the onions in olive oil with tomatoes (without skewers), chopped garlic, add a bay leaf.
When the onion softens, add the lamb and fry the flesh into gold.
Then add white wine and a little water. Further sliced jam potatoes.
Cover with a lid and simmer for a gentle fire for about 50 minutes.
And it is done.
